Every Saturday morning I treat myself to a little indulgence of pancakes, however, these are not your guilt ridden refined flour high carb pancakes. These are my secret weapon anti age protein pancakes made with protein powder, flaxseeds, cinnamon, almond milk and an egg. Totally guilt free!

Flaxseeds is one of the anti age ingredients in this recipe reaping benefits that may help with your digestive system, give you clear skin, lower cholesterol levels, decrease sugar cravings, balance those crazy peri-menopausal hormones, fight cancer, promote weight loss and this is just the tip of the iceberg!

Thee protein pancakes are so easy to whip up with the five simple ingredients that include superfoods and enough protein to keep you in the fat burning zone. Keep in mind that not all protein powders are the same. Choose a high quality protein that holds the pancake together and has the right flavor you like. I prefer AgeLoc TR90 protein powder in vanilla.

Choose whatever toppings you like, but avoid high sugar options like maple syrup, honey, bananas, agave, etc. To satisfy my sweet tooth, I generously top my protein pancakes with yogurt and plenty of fruit. You may even want to add another dash of cinnamon on top of the berries for extra punch.

INGREDIENTS

20g high quality protein powder

1 egg

1 tbsp ground flaxseeds

4 tbsp almond milk (or other milk substitute)

dash cinnamon

1/2 tsp coconut oil

TOPPINGS

1/4 cup plain yogurt

6 blackberries

20 blueberries

10 raspberries

1 tbsp pomegranate seeds

4 leaves mint, chopped

1/2 tbsp pumpkin seeds

METHOD

  1. Blend all ingredients in a bowl with a beater until powder is well mixed
  2. Heat skillet on medium heat and add coconut oil
  3. Pour small amount of pancake batter to make silver dollar sized pancakes
  4. Flip and cook on other side
  5. Top with yogurt, berries, mango, pumpkin seeds, mint or other seasonal fruit
