Healthy Snickers Bars

These healthy Snickers Bars are to die for. ‘Nough said.

Honestly, if there is one thing I bring to a dinner party when I want to really WOW my friends, then it is a gift box of Healthy Snickers Bars, which was originally introduced to me by my Icelandic superhero Vala. My gourmand French husband even admits that these taste even better than a Snickers bar and it is the recipe that is most requested of me.

These healthy Snickers bars take no time to prepare and contain nourishing ingredients that your body will thank you for.

INGREDIENTS

Base
100g almonds
100g medjool dates (if dates are too dry soak them in water first)
Pinch of sea salt
1 tsp vanilla
60g almond butter (or other nut butter)
1 tsp maca powder
1/2 tbsp coconut oil (optional – add if the base is not sticking together enough)

Peanut Middle
1/2 cup toasted salted peanuts, chopped (for a healthier version, use chopped hazelnuts and 1/4 tsp salt)

Caramel Middle
100g maple syrup
50g coconut oil (melted)
50g almond butter
1/2 tsp sea salt
1 tsp cocoa powder

Topping
200g 90%+ dark chocolate

INSTRUCTIONS

1. Mix almonds and dates in food processor, then add the rest of the base ingredients.
2. Pour into a baking tin and press hard to stick.
3. Sprinkle salted peanuts and put into the freezer while preparing the rest.
4. Mix Caramel Middle ingredients together and spread over the base and return to freezer.
5. Mix chocolate in bain marie.
6. Remove base from the freezer and spread chocolate on top of caramel.
7. Cool in freezer for 5 minutes or until the chocolate becomes hard enough to cut through without cracking. If the chocolate is still too soft and gooey, return to the freezer every 3 minutes and check.
8. Cut into squares and store in an airtight container in the fridge.
